Gin

For us, gin isn’t just a drink—it’s part of the journey. One twist that helped us Find Our Way. We don’t do gimmicks. What we do do is great gin. Fresh and wild flavours, crafted with care to make a damn good spirit.

This is the kind of gin we want to drink, so we're going one step further and making it. Small-batch. Full of character. Built on tradition, twisted with creativity.

We know it would be easy to make terrific claims about all sorts, where our ingredients come from and how special and interesting we are. We’re going to level with you and be honest right from the very beginning.

Not all our botanicals are sourced locally. Our starting spirit doesn’t come from next door. Our still wasn’t hand built by a local artisan who’s been making stills in the area for thousands of years.

But that’s because you’ve got to start somewhere. We aim to be in a position to make these claims honestly (apart from the ancient still making wizard). Some day in the future, we hope to have all the local and home-grown botanicals we dream of, and we’ll be accountable and transparent, so you can follow the journey and watch everything grow.

We’ve already planted tons of juniper trees and we aim that all our juniper will come from our own site. But that’s just the start.

It's the same for all our botanicals. We’ve chosen them, not just because of how amazing they taste distilled, but also because we can grow them ourselves, or we can go and forage them from the end of the road. Everything that happens at Twistillery is done with one eye on the future, with an aim to get more sustainable, and more local and more deeply rooted with every season.

We won’t give you a perfect serve but we will encourage you to find your own twist.

Visit our shop and enjoy it however you see best.

Spirit

We start with the finest neutral grain spirit for our gin, and we make sure every drop comes from a UK producer and supplier. If we can’t make it ourselves, then only the best will do!

Botanicals

If you want to make excellent gin, you have to use excellent botanicals. Starting out we’re only using our approved suppliers to get the best ingredients possible, and over time, as the planting takes hold around the distillery, we aim to grow all our ingredients. If we can’t grow it, we simply don’t use it.

The New Life

Foraging

How better to share the amazing Scotland coast line that we’re lucky enough to call home, than by foraging botanicals from that same coast line, and distilling those ingredients to give the most accurate taste of what get to experience every day. One measure of our gin is Scotland, distilled.

Growing

We’ve said it before and we’ll say it again. Our aim is to have all our botanicals grown on site. We can feed waste to livestock, the livestock will fertilise the ground around us, and the ingredients grown will be even better, more natural, and more organic. The goal is this fully closed loop supply circle, but that might be some time away. For now though, utilising the fields around us, as well as greenhouses and polytunnels, we’re working to supply ourselves as best we can.
